Some part of my Jungian unconscious suggested I get cream of tartar to stiffen the meringue. I have no idea how I knew to get it. I recall early memories of cream of tartar in the cupboard but it was never used. So I got it, and it works.
I like it better than lemon juice or vinegar because it adds no water or flavor. I tried citric acid, but it was too easy to over-dose the eggs, resulting in a bitter mess.
We still have not figured out how to keep our pneumatic pancakes and eggs from deflating once the heat is off, but with this Amazon product we have plenty of cream of tartar to keep trying.

And it is just like the stuff that costs so much in the market. I got so much, so cheap, that I will be sharing it with a friend of mine who I just bought a stainless steel cook set for housewarming (now it's time to teach her how to keep the set looking new!)
If you are in the market for Cream of Tarter, or just want to keep some on hand for when you need it, I highly recommend picking up a jar from Amazon -- it's a great deal!
