Great yeast for pizza; Cruncy, light crust. Good flavor.
Added 4 grams to
1,000 grams 00 flour,
570 grams water,
25 grams salt,
12 grams olive oil.
Rest 3 hours then cut the balls (7).
Balls rest for 4 hours.

I dropped this yeast in 110°F water and added a ½ teaspoon of brown sugar per teaspoon of yeast, and it grew perfectly fine in 20 minutes. I let it sit a full hour before adding flour to have a more pronounced flavor. The dough grew nearly triple in size at 72°F after another hour.

Will be buying again!

Like my title states, "It's yeast." It does what it's supposed to do and that helped me make delicious bread for my family. The instructions on the can aren't in English, it's in Italian. I didn't need a translator, however, I just added however much my recipe called for which was 2tbsps. I made 3 french breads the other day and for sure, the yeast was active! I proofed my dough 3x to get them the biggest possible. It was great! Some advice, if your recipe calls for yeast and you have to add warm water to it, make sure your warm water is around 110°. If it's like 120, you could risk killing the yeast and your dough won't proof. The max temp of my water was 112° which is still pretty high but the yeast survived and my dough got really big! I’ve been making pizza for a long time (20+ years), and I was skeptical that yeast would make much difference since it is only 0.1% of the dough. But, I like Caputo flours and it’s only a few bucks, so I tried it. It really does improve the flavor of the dough vs. the SAF instant I was using previously. My dough is usually doing a 3 or 4 day fermentation in the refrigerator, and this is well suited for that kind of process. Always learning...
