Bob's Red Mill Gluten Free 1 to 1 Baking Flour
Bob's Red Mill has created a special 1-to-1 blend of gluten free flours, starches and xanthan gum, making it easy to transform traditional cookies, cakes, brownies, muffins and pancakes into gluten free treats. This flour is designed for quick breads and not recommended for use in yeast recipes. If you are looking to bake yeast breads or cinnamon rolls, our Gluten Free All Purpose Flour will do the trick!
Gluten Free Butterscotch Blondies Recipe
Makes 16 brownies. Prep time 15 minutes; cook time 25-28 minutes
Preheat oven to 350°F. Spray and line an 8 x 8-inch baking pan with parchment paper.
In a light-bottomed saucepan, melt butter over medium high heat. Wait for it to bubble, crackle and foam. It will quickly darken in color and become fragrant. Immediately pour into a heat-safe bowl and let cool for 5 minutes.
Into the butter, add the sugars and whisk until mostly dissolved. Add both eggs and continue to whisk until mixture is shiny and viscous. Don’t skip this step! It’s what will give the blondies their shiny, crackly top.
In a separate bowl, stir together both flours, baking powder and salt. Add dry ingredients to the butter mixture along with the butterscotch chips, rolled oats and chopped pecans. Stir until combined. Mixture will be thick.
Evenly spread mixture into prepared pan. Bake for 25–28 minutes until top is golden and the sides just begin to pull away from the pan. While warm, top generously with flaky sea salt if using. Let cool completely before slicing.

Best part is you can use your same recipes!
I think this might be the best product that ever existed. I give it 80 million stars and 2 thumbs up.
That being said, using gluten free flour had a little learning curve. I have noticed that the texture is much moister if I let the dough or batter sit for a bit before baking. Maybe it has to do with how this flour absorbs and mixes with the other ingredients.
This flour has been a life saver for me. I always make sure I have several bags on hand, and Amazon has had the best price I have found.
I know literally nothing about gluten free 1:1 flours but it's my understand they're a blend of different gluten free flours and other additives. This one seems a bit grainy to me, much more than the King Arthur 1:1. I've got a bunch of bags of this now and have to use it, but I think I'll go back to King Arthur once I've used all of these.
