Thank you for contacting Bob's Red Mill. I'm very sorry for any issues regarding our recent ingredient changes, but thank you so much for your feedback. We’ve recently reformulated some of our gluten free mixes because of many requests by our customers to do so. Some of the old mixes contained ingredients that many of our customers were sensitive to (like bean flours) which caused us to receive many complaints. The new Gluten Free Homemade Wonderful Bread Mix is formulated to be more consistent and have the lighter texture and flavor that our customers requested. It does have new directions and additions so if you’re using the old recipe then it will not turn out as well, and we are no longer making the old formula. If you are using a bread machine, the directions will be as follows:
Order to place ingredients for most bread machines:
1. Combined liquids in ingredients and place in bottom of baking pan.
2. Pour the dry mix on top of wet ingredients already in the baking pan.
3. Place the contents of the yeast packet on top of dry ingredients.
4. Use the basic/white bread cycle for a 1 ½ lb loaf.- medium crust
We removed the bread machine instructions because we were finding that our customer’s bread machines varied so much in terms of different settings, speeds, and other variables that people were getting very inconsistent results with the instructions on the package. Again, I apologize for any inconvenience that this may have caused but we do appreciate your feedback, and we thank you for being a Bob’s Red Mill customer.

The packaging doesn't include bread machine instructions, just regular oven instructions. (Hence the 4 stars instead of 5) I went to my bread machine manual and followed it's directions. I used the same amount of oil, water, and egg as the package called for, but I put it in my machine in the order my manual recommended.
Liquids first, dry mix second then made a "well" for the yeast then added it by placing it in the well. I set the machine on GF, with a light crust on 1.5 lb loaf and let it do it's job. 3 hours later our house smells yummy, and the bread is done. I let it cool several hours then slice it, PRO TIP: chill it first in the fridge to get thinner slices.
I love that it includes a packet of yeast. That makes it so much easier.
Overall it's a hearty bread great for sandwiches, toast and croutons. It is not a sweet fluffy bread like regular sandwich bread like bunny bread, but honestly I prefer a not sweet bread. It is a semi dense bread, your not going to get super thin slices, it reminds me of a deli style fresh bread. My husband and kids all love this bread. It's great with butter & jam, or cream cheese, and makes a great sandwich. It lasts roughly 5 days on the counter before mold grows (I'm in TN), but you can put it in the fridge or slice then freeze it. I got a lot of slices out of it, I cut them roughly 1/2 thick.
Overall it's a great mix, it's easy to use, fits our budget, and tastes wonderful, much better than store bought cardboard they try to pass off as GF bread around here.

Note that I always use 4 eggs instead of 1 egg and 3 egg whites, as the recipe on the bag calls for. But I'm quite sure that isn't the flavor problem.
Today I turned this bread into cinnamon raisin bread for the first time. After googling some recipes, here is what I added:
3 T cinnamon (the good kind)
1 cup of raisins
3 T honey
(I'm sure sugar would have worked fine, but we're trying to cut back.)
It was fantastic! You know how when you can't stop eating something because it's so good? Yeah. Like that.
On this occasion, I did mix everything together in a large separate bowl just to make sure it was good and mixed before I poured it into the bread machine pan. I doubt that was really necessary. One cup of raisins really looked like a lot, but in retrospect the one thing I would change up would be to add even more. Next time!
