We have tried both the old and new mixes and found the new mix a bit smaller but still tasty. I wrote to Bob's Red mill about changes to the ingredients. and here is the reply
Hi John,
Thank you for contacting Bob's Red Mill. I'm very sorry for any issues regarding our recent ingredient changes, but thank you so much for your feedback. We’ve recently reformulated some of our gluten free mixes because of many requests by our customers to do so. Some of the old mixes contained ingredients that many of our customers were sensitive to (like bean flours) which caused us to receive many complaints. The new Gluten Free Homemade Wonderful Bread Mix is formulated to be more consistent and have the lighter texture and flavor that our customers requested. It does have new directions and additions so if you’re using the old recipe then it will not turn out as well, and we are no longer making the old formula. If you are using a bread machine, the directions will be as follows:
Order to place ingredients for most bread machines:
1. Combined liquids in ingredients and place in bottom of baking pan.
2. Pour the dry mix on top of wet ingredients already in the baking pan.
3. Place the contents of the yeast packet on top of dry ingredients.
4. Use the basic/white bread cycle for a 1 ½ lb loaf.- medium crust
We removed the bread machine instructions because we were finding that our customer’s bread machines varied so much in terms of different settings, speeds, and other variables that people were getting very inconsistent results with the instructions on the package. Again, I apologize for any inconvenience that this may have caused but we do appreciate your feedback, and we thank you for being a Bob’s Red Mill customer.

I've had very positive results with other Bob's Red Mill gluten free products, so I was hoping this would be an economic alternative to the $7 loaves of gluten free bread from the market. Unfortunately it didn't work.

Making it was simple enough. I used a Kitchen Aid and followed the recommendation from other reviewers of using 4 whole eggs instead of 1 whole egg + 3 egg whites. This was supposed to prevent it from being crumbly. But sure enough, the loaf was very crumbly, to the point that I can't even use it in the toaster for sandwich bread because it would fall apart.

Taste and texture is great. It doesn't taste like "real bread," but it does taste like any other gluten free bread and that's fine with me. It's just the crumbly factor I can't get past. If a slice of bread can't even hold its shape in the toaster, I can't use it because that's how I always prepare my sandwiches.

This might be a good bread for some sort of dinner roll or thick slices for soup. But I needed it for regular sandwiches, and for me, it was a miss.

Every time I made this mix (4 times in all) it over-rose out of the pan and then collapsed when removed from the oven. I live in Phoenix, so there was no tricky altitude problem, and I tried different combinations of mixing and rising times. The last time, I mixed it only half the recommended time, with a paddle attachment as recommended, and cut short the rise time before baking. It appeared to be only starting to rise when I put it in to bake, and yet it exploded like a popover in the 350 degree oven, and then, yes, collapsed when it reached 210 degrees (as recommended) and was removed to a rack to cool. I give up. I have used two other brands of prepackaged gluten free bread mixes with no trouble, so I have to figure that it’s the mix.

As gluten free goes, it's ok. It's very easy to make.
There's just not much you can do with it. We are way above average bakers and chefs in our family. My daughter is a bioengineer so when we try altering recipes, we usually have success. We didn't find these bread mixes to be flexible recipe wise. You can add spices but take care because it doesn't need to be dryer and you need to know what flavor you're trying to get.
It's not the kind of dough you knead. It does require an hour of proofing (just time to sit before going in the oven.)
The bread made as directed is kind of like a dry rye texture without the flavor. If you toast it to put butter or jam on it, the bread just falls apart in your hands.
Because there are no preservatives, it will not last more than a few days.

I went ahead and let it bake, and at the end of the cycle the bread was 20 degrees lower than the internal temperature the bag says it should be when done. I put the loaf into the oven at 350 for 20 more minutes, and the internal temperature was finally at 210 as the bag states it should be. The crust was hard, and the loaf was dense and heavy with a very fine texture and an unpleasantly moist feel and eggy taste. I threw away the last 2 bags of this bread mix. What a waste.

A year ago I swore off of eating bread for good. I am gluten intolerant and I just thought there was no point in eating GF bread which was, imo, terrible. I could never understand why people were so hooked on their bread that they were willing to eat a far inferior version of it rather than let it go. I have since gotten married and am trying to get my husband to go GF too, since it is a healthier lifestyle. One of the things he doesn't do anymore is buy bread, but sometimes still yearns for it, especially for hamburgers. I caved and bought some of this mix since BRM has been good to me for other things GF and I thought I would give this bread a chance. Boy am I glad I did. My first time baking it and it turned out wonderfully. It is fluffy, soft, with a hard crust on the outside. I let it rise too much and it rose way far above the bread pan, but that didn't seem to do much except give me a nice big loaf. The batter was *very* sticky when I was mixing it up and it all stuck on the blades, but once I got it off the blades and into the pan, it turned out very nicely. I did add slightly less butter than was called for (simply because hubby spilled a little accidentally). Maybe the less moisture helped the bread to stay together without caving? Who knows. All I know is that it worked.

Of course, since the batter heavily leans towards bean flour, there is a slight taste difference than regular bread, but imo, that makes it even better. I am glad to have my other packages of this on hand. I won't make it all the time since even gluten-free carbohydrates are still bad in excess. But as a treat or when my husband plans to have hamburgers, it will be the first place I'll look for good GF bread.

*edit July 12, 2012* After eating this a few times, I found that the high amount of bean flour contained within makes it hard for me to digest, with unpleasant side effects. It's really too bad as the bread itself bakes up beautifully and tastes good. However, the bean flour is just too hard on my digestive tract, so I probably won't be buying this anymore, once I use up what I have. Unfortunately I had to mark down my review from 5 stars to 3 because of this.

I didn’t like this...AT ALL!!!! It is very dry, has ZERO flavor, tough... rubbery bread... I thought from Red Mills it would be much better. I used their products before and I’ve been....for the most part ... mostly satisfied. I read several reviews that said it might be dry so I added some olive oil and an extra egg- which I beat the eggs as suggested by one Reviewer... unfortunately, I was disappointed because it was unetable.... So, I tried another package.... made it as instructed... it was no better- maybe even drier... it’s like eating tough bread with no salt and no flavor... Sorry.

When I went to cut into it after it cooled, it was terribly dry. It looked nice on the inside, had an okay flavor. But, the dryness is not what I expected for Bob’s Red Mill GF Wonderful Bread Mix. I am extremely disappointed. I do not recommend this mix, nor will I ever purchase it again.

Bobs Redmill Gliten free Wonderful bread mix is not all that wonderful. It’s not a bread I would make sandwiches with. It has a strange kind of earthy flavor. Might be OK to eat with beans or a stew, otherwise, I don’t have much use for it. I probably won’t purchase it again. The loaf I baked didn’t get ate and I still have some more packs of this stuff to bake, so I’m going to have to get creative about what to cook and serve it with so it will get eaten...maybe. I won’t purchase it again.
