They create that tang by adding additional acid. The one I've seen most commonly is malic acid. It doesn't take much. I mix two teaspoons of salt, plus 3 teaspoons of vinegar powder, plus 1/4 teaspoon of malic acid to get a "bite" the way I like, tho obviously you should adjust that to your own preferences. The vinegar powder is just a flavoring (and also a scent). It won't make things sour on its own.
also: this comes so stupidly packaged: there's a thick zip-lock, which would be great if there weren't another thick plastic bag vacuum packed with the vinegar powder jammed inside of it. once you are even able to get that out of the ziplock bag, there is no way to open it without it spilling everywhere. (guaranteed starchy kinda-vinegar powder all over your countertop and floor) this would be worth it, if the product had any taste.
While this didn't work well for salt and vinegar flavor I really enjoy cooking with it! It's great to mix into vegetables to change the PH and get a nice tangy flavor without adding a sour vinegar flavor.
You can mix this in with a ton of different seasonings to enhance flavor!
