I made the bread, exactly as directed, the day before & let it cool completely in the pan, turned it out whole onto a sheet of parchment paper and sliced into crouton sized pieces. Of course, we had to taste test it! My husband's comment was " You have to buy more of this". (He love's making chili.) I used a dressing recipe that has you bake the dressing in a single layer on sheet pans, and it came out perfect!
Now I need to buy more.

So I am on keto and to maintain the ketogenic state I need to stay within 20 to 30 carbs within a day. So while I know this cornbread is not gonna taste like real cornbread I want something that is somewhat decent for the amount of carbs I’m about take in.
I am going to do a basic comparison of HighKey Keto Snacks Baking Mix & Low Carb Cornbread
vs. Good Dee’s Corn Bread Baking Mix
HighKey Keto Snacks Baking Mix & Low Carb Cornbread:
This cornbread was okay. I had no trouble making this mix. The instructions on the back were straight forward and my only extra additions were a few drop drops of “Cornbread extract flavor”. The batter was a little sweet and seemed a bit grainy. It cooked just fine and was nice and fluffy.
Good Dee’s Corn Bread Baking Mix:
This cornbread was a bit more dense. I was surprised by how moist it was but how it kept it shape and I was able to cut it. The instructions were straight forward and my only extra additions were a few drop drops of “Cornbread extract flavor”. However this batter was less sweet and cooked just fine.
HighKey Keto Snacks Baking Mix & Low Carb Cornbread vs. Good Dee’s Corn Bread Baking Mix
So once both were cooled, I tried both cornbreads. To me the flavor of Good Dee’s Corn Bread Baking Mix is closer to a real cornbread and is more enjoyable. I think as someone on keto I really appreciate that it actually taste like real food because so much of the food that I’m eating is not necessarily as flavorful. However, the consistency of the Highkey Cornbread could be considered better. I say this because the Highkey cornbread was grainy and so I felt it mimicked the texture of cornmeal that normally is in cornbread. If that texture is a must then the Highkey cornbread might be for you. However, the Highkey cornbread was also much sweeter and as someone who prefers savory cornbread this wasn’t enjoyable for me. Good Dee’s Corn Bread was amazing for keto. It actually tastes like cornbread. No it doesn’t have the gritty cornmeal texture but the springiness of the cornbread and the texture was closer to regular cornbread and aside from that it was just tastier. I found myself looking forward to my daily portion. I threw out the highkey cornbread.
To me the flavor of the Highkey cornbread was really basic, not really strong and not something I necessarily would buy again. I did like the fluffiness of the cornbread and I like that it had cornmeal texture but the flavor just wasn’t there for me and technically I seasoned both corn breads as I made them. I wont purchase the Highkey cornbread again.
I will purchase the Good Dee’s Corn Bread again because it was pretty good and I’m looking forward to making it again. I think it is expensive but worth it and I hope you will enjoy it as well.

In my case, this occured during Thanksgiving which is why I purchased the corn bread mix. Almond flour is the best alternative in my opinion but there are recipes that unfortunately fall through and end up being disappointing. They are also at times needlessly complicated as well which is where Dee's come in. This is really a foolproof mix and it tastes DELICIOUS--just like a loaf cake. You can definitely add to it and make it your own. I've eaten mine with butter and cream cheese so far, yum!! I added a tablespoon of maple extract and pyure stevia and it was (delightfully) mild. Not really sweet. So depending on how sweet you'll like your bread, I highly suggest adding a bit more if you want to go that route. The only downside to this is that the price is pretty high for me to make it a regular purchase. I hope Dee's becomes big enough to purchase at a lower cost.
