All baking power works by proving both an acid and a base, with the addition of water the chemical reaction between the acid and base produces gas, i.e., bubbles. The stronger the acid and base combination, the more gas and as such the more the baking powder will enable the rising. The potassium based combination does not produce quite as much gas as the sodium based combination. I use this baking powder making pure oat bran muffins. I've found that if I use 1 tablespoon plus 1 teaspoon of Hain baking powder I get the same rise as if I used 1 tablespoon of a sodium based baking powder. I'm satisfied with the product and am delighted to get potassium instead of sodium. You may find you need to use slightly more of this baking powder to get thesame amount of rise as with sodium based baking powders. I defiantly recommend this product.

I ordered baking powder with no sodium due to my husband's dietary restrictions. I had to purchase 4 cans in order to make it financially feasible. I figured no problem. I'll eventually use it and not have to reorder for a long time. 4 cans mind you! They expire in 2 months!!! Who can use 4 cans of baking powder in 2 months? SOOOOO good product.....just poor management! They should have been removed from their inventory....NOT shipped out to an individual customer.

I ordered this product, 4 pack in March and got a best by December 2013 on the bottom. I hope that's not really a problem, because I don't think I will be making that much of it that I would be able to use it up. You only use 2 tsp for 2 cups flour. So it would take a long time to use it up!

I really wanted an alternative to cornstarch based baking powder beacuse of GMOs in corn. So this was a good find.

I just made 1 inch diameter biscuits using 12 oz 100% whole wheat flour, 2 tsp of this, 200 mL of filtered water. In the oven at 350F after 13.5 minutes they rose 10-20%. I guess if I want more rising I add more next time. I used 4 tsp of the baking powder on another occasion and nothing rose at all.

I always order in bulk so I don't have to order all the time. I was surprised that I now have 4 cans of baking powder that will all expire in two months: October 2021. I would have preferred a package with an expiration date of at least a year or more out. No matter how much baking or pancakes I make, I will never use 4 cans in two months!

As someone on a very-restricted low sodium diet, this has been a great addition. Things don't taste quite the same using this rather than regular baking powder, nor do the baked goods rise as much, but beggars can't be choosers and this reopens the door to some things I've been unable to cook for a while. I should mention, however, that my daughter's been breaking bread for me recently with just basic ingredients (no need for any baking powders) and they're completely sodium free - taste great.
