Contains: 2.75 Pounds in a sealed plastic jar. Clear Jel (Cook Type) is a modified cornstarch used by many commercial bakers in fruit pie fillings. This cornstarch works well with acidic ingredients and tolerates high temperatures. It doesn't begin thickening until the liquid begins to cool. A Product of the USA. Due to acid and freeze-thaw stability, maintains consistency after canning or freezing. Also use to make smooth gravies, sauces and soups with the same advantages. 1.5 lbs. (approx. 2.5 cups) is enough to make fillings for up to 18 pies. Storage life of at least 1 year when stored in a cool dry place. Use Clear Jel if you're canning homemade pie fillings, since it doesn't begin thickening until the liquid begins to cool. Clear Jel is a superior version of cornstarch because it tolerates higher temperatures and works well with all types of ingredients including acidic ones. Use as a thickener in pies, stews, sauces, gravies and pudding.

Makes GREAT Apple Pie Filling

Like most other reviewers and novice canners, I wanted to can Apple pie filling and found that corn starch was not the approved method for canning so I went in search of this stuff and hoped it would arrive before my apples browned too much. This is a corn starch derivative that holds up to the heating, cooling, and reheating of home-canned pie filling and it works amazingly! There is a little bit of a trick to it to make sure it doesn't clump. You either need to blend it in with your dry ingredients completely and then wisk the dry into the boiling liquids OR you need to mix this into cold liquid before adding it to your pot (whatever liquid is in your recipe will do). The apple pie filling was still a little cloudy when I jarred it, but it was perfectly clear and the filling was beautiful after processing in a canner bath. If you want delicious apple pie filling that holds up when canned, this is the stuff.

The only problem with this product is that it does not dissolve completely leaving small visible white nuggets of clear jel. The solution I used was to take a small amount of jelly from the heated mixture and but it in a blender together with the prescribed amount of clear-jel and blend them until totally dissolved and then return the blended mixture to the boiling pot to complete the process.

Just a comment to Hoosier Hill Farm, you should change your policy and practice of not allowing consumers to speak to a real person when they have a question.

Pie Filling your Family will BEG for More!

I was getting tired of buying apple pies from the grocery store. I decided to make my own and can it in quart Mason jars. I looked on YouTube and found Linda's Pantry whereby she recommended this product on Amazon. I had bought 20 pounds of apples as they came into season that I needed to can. Hoosier Hill Farm Clear Jel provided me the quantity and the quality that I needed to make my apple pie filling. (20 pounds of apple took half of the container.) The net weight of the Hoosier Hill Farm Clear Jel is 2.75 pounds. This product thickens the filling with the apples. I can also use it for any pie filling (especially cherries). I can not tell you how pleased I am with this product. After giving some quart jars of apple pie filling away for Christmas, I now have family members "BEGGING" for more. Not bad for a first time use of this product. I will definitely purchase this product again.

To make pie filling, all you need is apples, sugar, cinnamon, and Hoosier Hill Farm Clear Jel. How simple can that be?

Better than flour or corn starch

Got this to use in thickening mustard pickles when I came across many authorities cautioning against using flour, as called for in older recipes, because it could prevent uniform temperatures in the bottle during processing. This product is derived from corn starch but it's not the same and performs just as you want it too, a good, neutral thickener. I look forward to using it in pie filling. A little goes a long way.
