In the Tokugawa Era in Japan, there was a saying that “Masamune means Sake and Marukan means vinegar.” As a showing of the lasting quality of Marukan vinegar, the name of the company’s founder, Suyakanzaburo was written on every barrel of vinegar produced.

This is an excellent vinegar that can be used for any recipe that calls for vinegar...not just Japanese foods.
The difference between seasoned and unseasoned rice vinegar is very important. Seasoned Rice Vinegar has added salt, sugar, and often MSG, while the unseasoned vinegar is simply rice and water. This is critical for properly using the right ingredients for various recipes, without the added ingredients in seasoned vinegar.
The most common heavy use for unseasoned is for properly seasoning sushi rice. It can also be substituted for any recipe that calls for vinegar, and the advantage is the additional umami flavoring that this product brings to food.
Marukan is a top-named brand and along with Kikkoman, is one of the two most recognized brands in Japan as well as worldwide.

What a great surprise this was! This rice vinegar is by far the best we've ever tasted and it improved the quality of our sushi rice tremendously. Not only was it a huge taste-success in this dish, but now we've decided to use this brand exclusively and intend to enjoy it with a variety of foods. Definitely worth the money.
I started out only using rice vinegar for ramen, etc. but then I grew to love the taste so much when splashed in ramen I think it is crazy far above that Chem lab made white vinegar I always used to use. I guess there's just something about food made from.. you know, food. It tastes better.

Short of rare and specialty rice vinegars (read $$$), you can't go wrong using this for any recipe that calls for rice vinegar. I've personally used this for several decades and never been disappointed.
With a little salt and sugar, Marukan tastes great on short grain rice as-is. This large size is a wonderful value for the money. I refill the regular sized bottles with this (and make a seasoned one as well).
I love this stuff and I'm glad it comes in a large, much more cost effective size!
