Product Description
This yeast has good tolerance to ethanol and free sulfur dioxide, and ferments to dryness. Premier cuvee is noted as a very low producer of foam, urea, and fusel oils. It is recommended for reds, whites and especially champagne. This yeast is reported to perform well restarting stuck fermentations. Winemakers have remarked that premier cuvee is the fastest, cleanest, and most neutral fermenter offered by red Star. Ferments best between 7 Degrees degree C (45 Degrees - 95 Degrees F). preparation: this envelope contains enough yeast to make up to 5 gallons (20-23 liters). for best results, dissolve yeast by adding about 1/4 cup (50ml) of water at about 38-41 Degrees Celsius(100-105 Degrees Fahrenheit) after opening, the yeast should be used within 1 month and kept under refrigeration. Alcohol tolerance: 14-16 percent , reds, whites, champagnes and stuck fermentations.

So it is a great carbonating yeast that will produce a fizzy medium alcohol beverage in about 6-8 days. But if you are not in a hurry and want max flavor, there are more suitable yeast from Red Star.

Although one package is good for 5 gallons, I usually use 2 packages for my 6.5 gallon fermenter. Over the years, I think I had only one slow start from this type of yeast. It yields between 13 - 16% alcohol. The time varies from 3.5 weeks to 5 weeks (depending on the temperature in the house).
I had never used this yeast to ferment anything all the way to dryness before, but decided to try it with a small batch of cider. 1 month into the ferment, it's looking pretty good.
I won't comment on the flavor or performance of this yeast, it's world famous and industry leading, that info is all available on the web.

Those who are targeting high ABV like 16 or above should be careful. It really becomes too strong a drink after 14%. So keep the sugars low for lower ABV.
I bought this primarily for three qualities claimed in net literature
1) Temperature range from 7 to 35 degree centigrade
2) ABV upto 18%.
3) No off flavours.
2nd & 3rd point have proven to be true. 1st point will be verified in peak winter and summer.
Though I haven't used Lalvin 1118 - which is same (as per met literature) as Premier Cuvee, regarding Alcohol percentage & Temperature range, but Cuvee seems to be better than it in two aspects:
1) Lower Price
2) Lower or negligible Fusel alcohols & off flavour
Actually, 2nd point here will be better verified in summers.
