I have been making pizza many years and have tried a variety of flours, but it was always hit or miss on being able to stretch the dough thin the way I like it. My pizza making took a leap several years ago when I began using Antimo Caputo pizza flour. This made it dramatically easier to stretch the dough and I never considered using another flour until reading about 5 Stagioni Pizza Napoletana. This flour actually kicks my pizza dough up another notch, partly because it is even easier to stretch, but mostly because it adds a subtle but significant increase in flavor. It also ages in the refrigerator to flavor perfection, hitting a peak about four to six days later, whereas other pizza doughs fizzle within a few days. I only wish it were less expensive, perhaps with an option to buy multiple bags at once with a lower cost per bag, but for a pizza lover like me it is a worthy and almost essential extravagance even at the current price of $12.39 each. The end result is much better than almost any pizzeria.

I followed the directions on the bag. Converted metric into cups, tablespoons, etc., FYI, I found out too late that the 500 grams of water, which equates to 2 1/8 cups was nowhere near the amount needed. I kept adding more water little by little but the dough was so dense, it damn near blew out my Kitchenaid mixer! 500g of water may work in other parts of the world but at altitude it wasnt even close. I ended up using 2 1/2 cups water and it still wasnt enough. It fought me during the "roll out" process. The dough was tasty and had a crunch-chewyness but was dense and definitely not airy like its supposed to be. If I had to do it again, I would not use the whole bag. Half would be more than enough for 1 pizza and use more water than what was directed!! For $18, big disappointment!

Although this is the first time buying Tipo 00 flour, it was honestly one of the cheapest I could find and I'm really satisfied with the result. I was able to create some top notch Neapolitan Pizza. The dough turned up to be thin which is perfect and honestly, it just taste really really good to me. I was able to make like 6 small pizza with 2.2lbs of dough but just beware that although it's the cheapest Tipo 00 flour, it's not the best value compared to other dough.
