It's great to find organic cacao powder. I use it for making my own chocolate sauce. (Nice mixed in with plain yogurt and then frozen.)
This cacao powder is definitely less dark chocolate than, say, Hershey's or 365 brand. I use about 1/3 as much when making my sauce.
It's a fine powder that blends really easily with sugar. No problems with lumps/caking at all. Cooks up well and has a much less bitter taste-----more "light." I really, really like it.
My chocolate sauce recipe:
3/4 cup organic sugar
3/4 cup organic cacao powder
1/4 cup organic wildflower honey (cold pack)
1.5 tablespoons organic butter
1/4 cup organic plain yogurt
big dash of kosher salt
Put all ingredients in pan, adding vanilla after sauce is smooth/sugar dissolved
>>>not quite 1/4 teaspoon of organic vanilla
Heat slowly, in pan with heavy bottom. Stir until sugar dissolves. Makes nearly 8 oz of sauce. Refrigerate.

This is a great economical option over buying pre-made natural chocolate sauce. Chocolate sauce is expensive when you buy it pre mixed. When you purchase the natural raw chocolate like this you can easily make it yourself. I use it most to make homemade mochas. There are organic chocolate sauce listings on Amazon that just contain chocolate and agave nectar. It is easily 3-5x the price if you buy it pre-made over just buying everything and mixing it yourself. I have tried with agave but I prefer to melt some organic sugar in water with cinnamon and mix in a bunch of this until it's the right consistency. You still get to keep the powder raw. A great purchase.
