I make 5 gallons of syrup in my brew pot at a time. I get a 25LB bag of cane sugar at Mr. W's big box club. I store the syrup in my lagering freezer in the gallon water jugs the water came in. My tap water is technically speaking "YUKKY". Its easy mix a batch root beer just pour a jug of syrup in a corny add 4 more gallons of water, a bottle of extract and force carbonate or pitch a pack of Red Star Champagne Yeast chill tap yum.
Add some Zatarain's Root Beer extract to a white cake mix and bake in desert cake shells.
Top cooled then frozen cakes with real Vanilla bean Ice Cream freeze solid.
Add some Zatarain's Root Beer extract to a batch of meringue.
Top and completely cover ice cream and cake with meringue and quickly bake in a hot oven.
Zatarain's is good and cheaper than Gnome.
Don't get me wrong Gnome is good stuff.
Gnome just costs 4 to 5 times more then Zatarain's.
The only other Con: is Gnome comes in a frustrating pouch not a bottle.
Pro: Gnome also has a Red Burch beer flavor.
I started making soda to get away from HFC High Fructose Corn Syrup.
Mexican coke at Mr. W's big box club is to expensive and it wasn't available when I started making soda.

Gnome is good too but at around $8.00 a pouch + shipping I make a lot more Zatarain's
If you don't have a CO2 system get a large balloon (weather or punching bag), place mix in a water cooler bottle, drop some dry ice and place the balloon. Repeat as needed for desired carbonation.
Also try a root beer glaze on baked ham - yum.
I typically add to well water but if you like the fiz - then big box brands of bottled seltzer water work just fine.
I simplified things by just using a basic recipe of the concentrate, raw sugar, vanilla and yeast and the result was amazingly good... I took 10 Grolsch bottles full to a picnic and returned home with 10 empty bottles to refill... I found the Red star champagne yeast to not leave any yeasty aftertaste for anyone wondering about yeasts to use....
I can't wait to make another batch...
