I have used it before after the expiration date. I wouldn't if it were several months or a year.

Depends on the bread machine. My Zojirushi had a cake menu that makes cornbread. It doesn't go through the rising and beating down and whatever other steps are required to make yeast bread. I would try it, if once your 9 1/2 x 13 is filled enough for it to rise an inch or so, you should be safe, test to see if it is done after recommended time, you may need a few more minutes. Good luck, why mess up two pans when one should do.

10 inch is better, because the cornbread would be too thick in an 8" pan. (Beware of Krusteaz SOUTHERN CORNBREAD, however, because they've CHANGED THE RECIPE and now it's loaded with sugar. As everyone knows, Southern Corbread DOESN'T HAVE SUGAR!!!!. Everyone should write Krusteaz about this dreadful decision!)

IMHO, yes. I watch it very closely while cooking to ensure it doesn't overcook. Not as dry as Jiffy. The best cornbread I have found.
