I haven't purchased this brand myself, but looking at the color, this will not be the same as triantafillo syrup used for mahallepi. Look for Amalia brand syrup, or any syrup, where the color looks dark red/purple because it is much more concentrated.

Don’t see why not. I’m guessing you are thinking of incorporating or folding the Rose syrup into a home made ice cream. If so, you may want to somewhat reduce the sugar In the recipe so the dessert won’t be too sweet.
