This is very fresh and flavorful whole wheat flour. It is not white bread flour- it is ground from white hard wheat, so its not going to act like King Arthur. I use it to make a beautiful whole wheat sourdough. It requires extra moisture to rise well, like most whole wheat, but it tastes really good, isnt as heavy as Red Mill, and is also great to make sourdough starter with.
