I made cookies with this and they were indistinguishable from regular, wheat-flour cookies (pecan and chocolate chip, just using the recipe on the back of the Nestle chocolate chip bag but substituting Bob's for regular flour). I haven't done a lot of other experimenting yet, as I've only recently become gluten intolerant, but I have tried other brands, and I prefer Bob's.
