I use this mix to make corn muffins. The box contains specific measurements to make the thicker batter required on that as well as, of course, the measurements to make a square pan of cornbread. I love how it tastes -- lightly sweet with good cornmeal flavor -- and how easy it is to make. I usually opt to substitute butter for vegetable oil, as per the instructions, to give it more of a homemade flavor. My only disappointment is that I can't overfill the muffin tins and get high-domed muffins. Instead, they flatten and spread. That might be because of the butter, but since I'm not willing to lose that flavor, I'll simply fill only 2/3 full.
