When you must substitute - this is OK

After developing an egg allergy, I sought substitutes for use in baking. The ground flaxseed does produce an OK warm cake, but after a day, it becomes gummy. Applesauce, bananas, and yogurt and vinegar all do a good job bringing moisture but there was something missing in the flavor plus you have to have on hand several items to make the 'egg'. So, Bob's Red Mill egg substitute was the next choice. For baking, it produces a good finished product that survives OK the next day, too. For me, there is some loss of flavor. However, when eggs are off the table, this is a good substitute.

Zero protein

When the label says "Egg Replacer" I assumed it would have a nutrient profile than was somewhat comparable to an egg. It does not. The label says Zero protein. I didn't think that was possible. Even WHITE BREAD has some protein.
How does a product that has zero protein "replace" a food that is a relatively good source of protein?

I have used this products for numerous baked goods, and they have always turned out well. You would never know that actual eggs were not used. I am surprised by the one star reviews: you must follow the instructions precisely to get the desired results. Otherwise, I can't imagine what went wrong because I have never had a problem with this egg replacement.

I have used this now in muffins, cupcakes, and chocolate chip cookies. All have turned out perfectly. There is no flavor to this product, so it doesn't interfere with the recipe at all. It is fantastic.

I have been using this for baking cookies, bread and pancakes and it works pretty well as egg substitute. I will be trying more recipes using it and see if I need to make adjustments. I have found that adding a bit of thickner like Xanthm is sometimes necessary. I will buy again.

Being a vegetarian, we were looking for an egg substitute and we noticed this product. We use other products from Red Mill such as TVP protein and we are please with their products. This egg substitute really made our transition from egg to egg free so easy. We use it to make pancakes and kids love it (yes parents too :-)

If you are big into rubber cement and boogers this is the product for you... see the video, I will be doing a cooking version of the video start to finish. To give you a better idea of what it does, its really like mixing up flour and cornstarch over a quick heat , I actually cooked it on medium at first with butter then low when I noticed the first batch was like rubber cement... so I figured the thickening agent in it was setting too fast, so there it is, its like eating gum and salt... enjoy!!! And I hope this review helped please see the attached video... FYI I love Bob redmill products as to why I pyrcheds this, this was just a massive disappointment... still keep buying bobs they are the best in most other products

My little sister is vegan so when she comes to visit we like to make sure that we convert our favorite recipes to vegan options. This is by far the best egg substitute that we use. It beats out chia and flax and applesauce and chickpea water and all of the other substitutes that we have tried. I mean just look at the crispy crunchy exterior on those candied almonds!!! They were delicious!
