I can’t make my special cookies without it

I’ve been making Springerle (a traditional German cookie) every Christmas for almost forty years. Friends and family look forward to them. I’ve tried using other types of leavening agents, but nothing works like baker’s ammonia. The dough is easier to roll, the pictures are clearer and the cookies have a better texture. I buy the large bag so I can share since baker’s ammonia is hard to find around here.
