I didn’t know rye floor came dark, light and white . ( messed up a few loafs testing) talked to a real bread maker . Told me to look on amazon for light or white . Found this one cheap per pound . Made my first sour dough rye on a pizza stone in my oven . Holy cow ! It came out better than big stores make . Cause I made it ! This very clean organic four was the main reason for my success. Thank you Great River for you great product! 25lbs of flour sounds like a lot . But when it comes out this good I’ll be buying again soon!

I ordered 25 pounds bag with dark rye flour because of the good reviews.
Unfortunately I was little upset when I noticed that next month this flour will be expired. It’s almost impossible to use all flour I got for so short time for family of 4.
Nevertheless, in order to somehow save my purchase, I decided to store flour in glass jars. However, during this procedure, I found bugs in the flour. And what could I do? Well, I decided to save my purchase by sifting the flour and filter out the bugs out, although this is not an easy work at all, there’re 25 pounds of flour in the bag. But before to start this procedure I decided to check the smell of flour. Well, of course, how can old flour with bugs smell?
I didn’t want to offend anyone, so I bought the same flour in the store this time, but fresh and only 1 pound bag.

Without any doubt I felt the difference. Therefore, I made a decision to sent my purchase for recycling.
I understand that this is not the best thing to do, but what else to do with a spoiled product?

Great River Milling Rye Flour

This flour makes insanely good bread. The bags I've purchased have always been fresh and promptly delivered. As others have mentioned, I'd categorize the flour as a medium-light rye. I've tried other brands and always keep drifting back to this one.

My favorite recipe uses 650g of unbleached bread flour, 150g rye flour, 200g sourdough starter, 30g caraway seed, 20g salt, 3g dill and 2g of commercial yeast, following the overnight ferment technique laid out in both Robertson's "Tartine Bread" and in Ken Forkish’s, "Flour, Water, Salt, Yeast."

I use a lot of flour, and had really wanted to buy a good quality 25 lb bag of rye, after looking around this appeared to be the best. I bake breads in traditional fashions, poolish, biga, straight doughs, and sour doughs, usually boules using cane proofing baskets. I wanted to make a German rye bread with Caraway seeds for a friend's party. Having never worked with high percentage rye loaves, I opted for 80 percent hydration similar to my whole wheat recipes. In the future I'd use 75 percent hydration with this flour and an hour long autolyse. The flour was fresh and easy to work with, very happy with the mill.

I just realized this is the 10th bag I purchased of 25 lb of dark rye organic flour. I think it deserves a review. I started making my own sourdough rye bread in 2017 after our German bakery closed. For months the results were a bit disappointing but certainly edible. I read a lot of recipes and watched a youtube video. Rye flour is dense and has less gluten than wheat flour so it helps to use recipes specifically for rye flour. King Arthur's website has some good recipes that call for adding a small portion of rye flour which I thik helps you learn to use this whole grain healthy flour. However, this flour really benefits from the addition of sourdough a long slow rise or preferment. Over the years I have gradually increased the amount of rye flour I use so the only white flour in my bread is the amount in 1 cup of my white sourdough starter. The German bakery told me they had to use some yeast to their bread dough but wouldn't tell me how much so I experimented and I use 2 tsp instant yeast. Here's my recipe if you want it.
1 cup white sourdough starter
1 cup rye sourdough starter
1 c water( I use spring water because our city water has chlorine and flouride which retard yeast)
2 c dark rye flour
I mix this together and cover with plastic and leave for 12 to 24 hours at room temp
It's bubbly and double in size after the 12 to 24 hours
I add 1 Tbsp caraway( optional or use a different seed)
3 cups rye flour
2 tsp instant yeast
1 cup apple or orange juice
1 Tbsp molasses
1 tsp salt( we are on low sodium diet)
Mix on setting 2 on my kitchen aid mixer for 6 to 7 minutes scraping bowl to incorporate all of the flour although for years I kneaded it by hand
I pour this into an oiled 3.5 quart dutch oven
Let rise about 2 hours till it comes almost to the top of the pot
Carefully place in oven on a large cast iron skillet, pizza stone or pan so it doesn't burn the bottom
cover with lid or tented aluminum foil if it's risen too much
Bake at 425 for 30 minutes then reduce temp to 375 for 15 to 25 minutes till internal temp 210 F(important to invest a few dollars in an instant read thermometer)
Remove from oven. Turn pot upside down while cooling. Store in a paper bag
This dense bread is best the next day and for about a week though I put the paper bag in a plastic bag after a day or two and if it's still around after 4 days I store it in the fridge or slice and freeze
I believe every recipe is flexible so make adjustments as desired. I have for the last 5 years!

Bakes pretty good rye bread. Chewy, moist, and flavorful. I was using a coarser rye flour before so at first I wasn't sure what kind of results I'd see. I'm a newbie, btw, with sour dough and rye. I think the finer grind allows me to use 100% rye, instead of needing to incorporate white wheat for structural gluten-y purposes. Ideally though I'd probably want to use a combo of finer (for structure) and coarser grind (for a hearty texture) for an ideal rye bread.

I'm not a fan of using it for feeding my starter as the increased surface area makes the starter explode (all over my fridge) then die out rather than allowing the yeasts to slowly feed. I'll stick with Hodgson Mills rye for feeding my starter.

Love the price and big bag. Will probably stick with this flour for baking. Recommend.

I use this organic milled Rye for all my home loaves. It serves well for a home fed rye sour used in recipies. One has lived in my fridge for a few years fed only this rye flower and water.It makes wonderful Jewish Ryes and Black breads.
The 25 lbs. comes shipped in a heavy paper flower bag then packed in a card board box. I keep 12 cups at hand in the kitchen and place the rest in the deep freeze. There are no moisture problems and it stays rye fresh. I have been for some time on Amazons auto delivery. I use about 25 lbs every four months. There has been no problems with freshness or shelf life for my Rye based breads.

I like baking my own rye bread so I don't have to venture out shopping just because I'm short of bread. It used to be that Publix sold rye flour, so did Kroger and Wholefoods. Now nobody has it available on their store's shelfs. So after hours of driving around from store to store, I bought this rye flour online and am grateful that Amazon and Great River Milling offered this supply. The flour is terrific. It is clean, free of bugs, fluffy and tastes delectable. It makes such good bread. The price is good even though the shipping cost is steep, as it would be expected for this much weight and at current fuel prices.
