I'm going to be honest here. I make about 75% of my own Almond Meal & Almond Flour (and other Nut & Seed Flours). Sometimes, it's just easier to purchase the ready made varieties. If making your own Almond Flour, you have to blanch the almonds, remove the skins, dry, then grind to a fine flour. Making Almond Meal is much easier.

I prefer Almond Meal when making Breads & some types of Cookies & Brownies, because the meal has a nuttier texture. If you're wanting to make Cakes, Pastries, Gravies, Sauces, Etc., then you really should lean more towards the Almond Flour. It makes a "lighter" finished product, which is more like traditional flours. You don't want the heavier grainy effect you get with Almond Meal.

When making Cakes and most baked goods, with Almond Flour, I use about 1/4 cup Coconut Flour to every 2 cups of Almond Flour, plus 2 teaspoons Xanthum gum (glucomannan or any gum) to help stabilize it. I usually make up a mix of:

Almond Flour Baking Mix
4 cups Almond Flour
1/2 C. Coconut Flour
1 1/2 T Glucomannan (or other gum)

Put it in a vacuum sealed container for when you need it. Follow recipe, omitting coconut flour & gum, if called for.

Here's a quick little recipe you can make. If you want to make little Vanilla Mug-Cakes, "omit the Cocoa" & "double the Vanilla".

MAXIS CHOCOLATE MUG-CAKES (No Gluten, Eggs, Dairy or Sugar)

2 Cups Almond Flour Baking Mix (Recipe Above)
1 Cup Stevia
3 TBSP Cocoa
1 tsps. dark cocoa (optional-like Hershey's powdered)
1 tsps. Baking Soda
3/4 tsps. Sea Salt

Whisk Above Together.
Then add:

1/4 Cup Coconut Oil (melted)
1 tsps. Vanilla
1 tsps. Vinegar
1 Cup Water or Nut Milk (room temperature)

Mix everything together and place into 5 Ramekins or Mugs. Put onto a plate and into the Microwave. Depending on the wattage of your microwave, it should take from about 3 to 5 minutes. If they aren't quite done, put them back in for 30 second intervals. They don't take long. As an icing, I like to mix up some Powdered Peanut Butter (regular or chocolate, with a little nut milk and spread on top).

Beware. Received this product in good condition, no broken seal. When I opened it up I noticed some black particles, didn't immediately think anything of it until I got further in the bag and saw a dead cockroach only to realize the black stuff that I saw was from the roach.
This is probably a fluke but beware nonetheless.

Being on Keto I find it sustainable because I make my old favorite foods in a Keto friendly manner. Almond flour is probably one of the most important ingredients.
Many Keto recipes call for almond flour, but not all almond flour is the same. I have tried 6 different brands and many leave your food gritty and dense!

Blue Diamond nuts are my favorite and so is their almond flour. It has a great flavor and less grit. It is lighter in color and ground finer than many of its competitors. I have remade recipes I originally didn’t like and with this almond flour I liked. I don’t mind paying a little extra when the quality is so much better. I recommend this to anyone needing a good go to almond flour!

Never tried this brand but with covid19 and all flours are gone i went with ordering this product online. I love it!! My macarons came out perfect. When i sifted i usually have pretty big pieces left behind (which is why you sift) there were no large pieces of almond left in the sifter. Will definitely be ordering again!

This flour makes excellent almond bread. It works great in any recipe using almond flour.......So happy I found this brand. Only negative thing is the bag does not want to re-seal. I think it's because the almond flour gets clogged in the track that is supposed to seal so I put into a baggy to store it..... As long as this price is in effect I will continue to buy.......

This is an amazing almond flour.
1. The amount you get for the price is great! For the amount and price of almond flour, this Blue Diamond Almond Flour is rivaled only by Costco's Kirkland brand. Even still, Blue Diamond's price still manages to beat it at times.
2. Flavor wise, this is great. I previously tried the Kirkland Almond Flour and Anthony's Almond Flour. This tastes similar to the Kirkland brand (a good thing). I personally did not enjoy the Anthony's almond flour that much, which is strange because I usually love Anthony's products.
3. This almond flour is blanched (no brown outer skin), sifted fine (no huge clumps), and not rancid! It also performs well in any recipe.

All in all, this is a great almond flour and the price is even better than Costco's brand!

Using this almond flour, I've successfully been able to make a replicate some of my favorite recipes, such as:
1. Jamaican Fried Dumplings (air fryers work too)
2. Sour Cream Biscuits
3. Rich, decadent, marbled cookie brownies
4. Pancakes
Etc, etc...

Make the choice and buy it! You won't regret your purchase. (Heres one last tip: When almond flour is mixed with coconut flour, the flavor more closely mimics regular flour).
